Exotic Fruit Salad

Looking for a really easy non cook summer breakfast? Fruit Salad is perfect especially in the summer. I am watching what I eat and having fruit for breakfast really helps to increase my 5 a day.

I like using exotic fruits at this time of year as they go so well with a bit of sunshine. I like to make up a batch to keep in the fridge and eat over a couple of days.

The best thing about a fruit salad is you can have any combination of fruits. Choose the fruits you like best and make up your favourite mix. I have a sweet tooth so melon and pineapple make a great base for my fruit salad.

I always add some citrus juice to a fruit salad like lemon or lime. This really helps if you are making it up to eat over a couple of days as it helps stop the fruit browning. Lime works best with an exotic fruit salad, gives you a great zing too.

It is always nice to top the fruit salad with something colourful like mint or pomegranate as we eat with our eyes. For my exotic fruit salad I have topped with passion fruit which gives a beautiful flavour and cuts through the sharpness of the pineapple.

Exotic Fruit Salad

Ingredients

  • 1 Melon
  • 1 Pineapple
  • 2 Kiwi fruits
  • 2 Limes
  • 2 Passion fruits

Instructions

  • De-seed and cut the melon into bitesize pieces
  • Core and cut the pineapple into bitesize pieces
  • Cut the Kiwi into slices and mix with the melon and pineapple
  • Juice the limes and add to the fruit
  • Add the passion fruit seeds on top
  • Enjoy
